I was starting to think it was my network too... but then I decided to just test out file types. Right now all of my files are in a DIVIX .mv4 format. When I just put a full ISO or the VOD files on my server and tried to stream them it worked without a hitch. So it might be worth looking at your file types.

I have successfully logged in to the appletv and changed to the directory with guisettings.xml... but I can't get the thing to open! What is the exact command I can use to open it, preferably using the Text Editor application that is in my computer's Applications folder.

    The following have not worked:
    open guisettings.xml
    open -a "/Applications/Text Edit.app" guisettings.xml
    open -a "/Applications/Text Edit" guisettings.xml

I even tried to QuickLook it using this command I found, to no avail:
    qlmanage -p guisettings.xml >& /dev/null

    Thanks for your help!

Here is an example of what happens:
    $ ssh frontrow@10.0.1.196

Welcome to the AppleTV (via atv-usbcreator)
    frontrow@10.0.1.196's password:

    -bash-2.05b$ cd "/mnt/Scratch/Users/frontrow/Library/Application Support/BOXEE/UserData/"

    -bash-2.05b$ ls
    Database plugins scripts
    Keymap.xml profiles skin
    Thumbnails profiles.xml sounds
    Torrents profiles.xml.bak subtitles
    apps rtorrent.rc system
    guisettings.xml screensavers temp
    playlists script_data visualisations

    -bash-2.05b$ open guisettings.xml

use a third party application(e.g cyberduck) to upload and download files so you can change it locally using a text editor
