FYI - Image sizes for cover art files
I see a lot of posts mentioning the image size of the dvd and show cover art (299 x 434), but I haven't run across any mention of the image size for individual episodes. So when I click on a show it will list the episodes and there is a shorter box to the right showing the image. Through some testing it appears to me this size is 299 x 160.

Been using 299 x 434 for both and have not noticed any issues.

But for the TV shows on my boxee box, it doesn't display an entire image that is 434 tall when you scroll on the episodes. It "crops" it to only show the middle portion of the 434 tall image, and it doesn't always make sense how it looks because it seems to choose the middle of the 434 image, whatever that happens to be. I wanted to make my image for the individual episode be exactly how I wanted it to look, and 299 x 160 tall seems to work perfectly.

I use folder.jpg's with .nfo files and some picture can go up to 1000x1500. If I want to use a custom art, I find one I like no matter what the aspect ratio (as long as it looks like a normal cover, not wide). Then just rename it folder.jpg and replace the one my media manager put.
If you have a Mac like me, search for a program called "ViMediaManager". And I think PC uses a program called "Ember Media Manager". Anyway, it'll save a lot of time with sorting and again I put a picture with any pixel size that looks like a proper cover, Boxee makes it fit. And you get a high quality picture.
