Can't turn off subtitles in Boxee Box
Keep in mind I am a beginner using makemkv and may have done something wrong... I ripped a dvd (not bluray) and it contains subtitles.
When I play the movie I see subtitles but I don't want to see them. I have checked the media settings in BB and made sure to uncheck show subtitles.
What have I done wrong or is BB not working with the settings in media?

I had this same question yesterday and found the answer with a search. Haven't tried this yet, but apparently you can pause the movie, bring up the OSD and then select the gear icon to get to more settings that will allow you to turn off the subtitles for that movie.
Apparently you can also apply the setting to all movies, but I was unclear as to whether this was actually working. Not sure how you bring up the OSD or if it automatically appears when you pause the movie so I'll leave that with you to figure out.

I had similar issue way back when, while you are playing the movie, if you hit the center select key, it does bring up more options for Video and Audio - under the audio tab remove the subtitle option
I have also ripped all my movies without subtitles
