When trying to watch Boxee on my computer screen, it is WAY TOO BIG and off my screen. What do I do to make the proper adjustments?

Go to settings, look and feel and then screen, screen format and overscan. Then you can fix that issue. Very easy to do.
Good luck!!:)

It only allows up to a 6% change and we need more.

You should be able to set it to a custom setting by using 'Advance Calibration" on that same screen. See >http://boxee.zendesk.com/entries/177616-calibrating-the-screen for more info.
My concern is that you may run into more troubles down the road. It sounds like you may have the windows DPI scaling set to more than 100%. This has been know to cause video problems. ...I am assuming you are using vista or 7.

Sorry... ya know what they say about people that assume. ...and I know very little about Mac. Did the first part of my post help out at all?

There is a setting in the System Preferences of your Mac to adjust overscan/underscan too, just FYI.
