For multipart movie files, I have tried the naming structure mentioned elsewhere in the forums ({IMDBName} {PartNumber}-of-{TotalParts}), but the system only seems to recognize the first part and not give access to the rest of the content.

Sure.
The movie Recount. I had it in two files:
Recount 1-of-2.avi
Recount 2-of-2.avi
The system recognized the movie and made an entry for it in the library, but when I played it, it stopped at the end of file 1 and didn't continue on.
None of my multipart movies have worked in full, though it generall creates entries for them. They just don't play past the first part.

I came to the forums looking for this question. Is there a proper way to name the files so they will play each part?
I have many movies in 2 avi files.

You need to name your movie files -part1 and part2 or -CD1 and -CD2 (or a dot instead of a dash)
examples
DieHard-part1.avi
DieHard-part2.avi
ToyStory.part1.avi
ToyStory.part2.avi
UrbanLegend-CD1.avi
UrbanLegend-CD2.avi
X-Men.CD1.avi
X-Men.CD2.avi
